Martin Cermak
Chef Martin Čermák is behind the culinary story of SenSa Bistro. For more than nineteen years Martin has been guided by the tastes of the world. From working in the kitchens of prestigious Prague restaurants to travelling to the markets of Lima to the backstreets of Taipei, he has gained experience that he now translates into the sophisticated cuisine of Nikkei.
His work has also been influenced by life in New Zealand and travels in Asia, where he immersed himself in the art of fermentation, working with raw fish and precise seasoning. For him, each dish is a dialogue between technique and story, always with respect for the ingredients and attention to detail.
